Chef’s Choice: Fillet Steak with Creamed Spinach and Tomatoes

This week we’re celebrating the start of summer holiday season with a Gourmet Recipe. It comes with a premium cut of meat: the tenderloin fillet.

Create the steak house experience at home by whipping up the classic side dishes: creamy spinach and baked cherry tomatoes. They go so perfectly with the melt-in-your-mouth steak!

Hello Chef’s steak night is a great opportunity to perfect those steak cooking skills. Next, our head chef Olivia will show you all her tricks (don’t worry, it’s not tricky at all!)

Take a look at the ingredients first. It’s always best to have the meat resting in room temperature for at least 20 minutes (even 30 minutes) before cooking. Remove the meat from its package and transfer to a plate. Pat-dry the surface well with kitchen paper. The meat will brown much better when the surface isn’t watery.

The cherry tomatoes go in the oven first, and in the meantime, lots of other good things happen. Have your veggies prepped and then tackle the steaks!

Heat the pan well before adding the steaks on it. The meat should start sizzling loudly the moment it touches the pan. That way it will start browning nicely, instead of boiling in its own juices. The impact on the taste is remarkable!

If the pan is super hot, you can bring the temperature down a notch after the steaks have started to sear nicely.

Do not move the meat around or even touch the steaks until you’re ready to flip them. Frying the first side usually takes 2-3 minutes, according to the thickness of your steak, and the way you want your steak to be cooked. For the tenderloin fillet, we obviously recommend a medium or medium-rare result, that is to say, nice and pink in the middle! So, flip and cook about the same time on the other side. Season generously with salt and pepper.

Finally transfer the steaks onto a board or a plate to rest. This is an important step! During the resting time all the juices distribute evenly to the meat, and you’ll end up with a tender and moist steak in every bite!

When the side dishes are cooked and the meat has rested, it is time to plate! Get creative, and you’ll surprise your company – even yourself!
