Chef’s Choice: Homemade Burgers with Sweet Potato Fries

Homemade Beef and Carrot Burgers with Sweet Potato Fries

Serves 4

Cooking time 20 min

Ingredients:

1kg sweet potatoes

1 1/2 tsp salt

1/2 tsp black pepper

2–3 Tbsp olive oil

Patties:

700g beef mince

1 onion

2 garlic cloves

2 (or little less) carrots

1 tsp oregano

1 tsp basil

1 tsp thyme

1 Tbsp Worcester sauce

2 eggs

1 tsp salt

1 tsp black pepper

For serving:

2 tomatoes

400g iceberg lettuce

80g grated cheddar cheese

4 whole wheat buns

80g pickled gherkins

Method:

1. Preheat the oven to 220°C. Scrub and slice your sweet potatoes into chips, lay on a baking tray, season with salt and pepper and drizzle with olive oil. Cook in the oven for 20 minutes.

2. Meanwhile, mix together the mince, diced onion, crushed garlic, grated carrot, herbs, worcester sauce and bind with beaten eggs. Season the mix with salt and pepper and use your hands to ensure everything is combined.

3. Split the mixture evenly into balls and flatten the balls into burgers, pop on a plate and leave in the fridge covered with cling film until ready to cook.

4. Wash and chop the tomato and lettuce. Have the cheese ready.

5. Heat a large frying pan over medium high heat and add a splash of oil. Fry the patties for about 5 minutes per side until nicely browned. Cover the patties with grated cheese and let it melt.

6. Halve the buns and heat them up. Fill the buns with salad, tomatoes, small gherkins and the cheesy patty. Serve with the sweet potato fries.
