Chef’s Choice: Truffled Mushroom Fettuccine

We haven’t been this excited about a Vegan recipe for a while. Get ready for something truly special!

Hello Chef’s recipe team is always on the lookout for exciting and delicious ingredients to bring to your table. In this recipe, there are two new premium items that we’re very proud of!

First, let us introduce you to dried porcini mushrooms. These are the mushrooms that the Italians rave about. And why not? Porcini mushrooms could very well be the best mushrooms in the world: full of meaty umami flavour. That signature aroma becomes even more intense in the process of drying the mushrooms.

So, start by soaking your porcini mushrooms and chopping some fresh chestnut mushrooms along with a couple of other key ingredients.

After a bit of mushroom frying and pasta cooking comes the second fun part of this recipe. Making of Pangratatto! Doesn’t it sound so wonderfully Italian?

Pangratatto literally means “bread crumbs”, and it is also referred to as the “poor man’s Parmesan cheese”. Since we can’t use dairy products in Vegan recipes, this version of Parmesan certainly is a fantastic substitute (to be honest, in this pasta we actually prefer it!)

Pangratatto is super easy to make. Basically, all you need to do is fry bread crumbs in olive oil with crushed garlic. Once fried, remove from the heat and add some fresh chives and grated lemon zest. This delicious crumble is perfect for sprinkling!

Who’s ready to plate?

Once the pasta is cooked and combined with the mushroom mix, it’s time for our second pride and joy – truffle oil! We’ll provide a sachet of black truffle oil with this recipe. Drizzle your portions with this aromatic oil just before serving. So, poor man’s Parmesan or not, when you have this pasta in front of you, you’ll be eating like kings!
