In the Kitchen: Meet Busy Working Mom, Tiia Doyle

She orders the Low-carb Box for two people every week, and shares the meals with her husband Paul, and their 3-year-old son, Elliot.

The family’s housekeeper Analiza usually does the cooking for this busy family. “These days I just go to supermarket for breakfast items really”, says Tiia, “It’s fantastic.”

Paul eats a gluten-free diet. For Elliot, Analiza prepares a small side dish: usually rice, whole grain pasta, or potatoes.

One of Tiia’s favourites is miso roasted chicken drumsticks and vegetables.

“I would never have had the courage to buy and try miso paste on my own”, she says. “And it’s so good!”

She has loved many other sheet pan recipes as well. “I love it when our oven does most of the work”, she laughs.

 

Miso Roasted Chicken Drumsticks and Veggies

Miso Roasted Chicken Drumsticks and Veggies

Serves 4

Cooking time 45 min

 

1 kg chicken drumsticks

1 large head cauliflower

250 g mushrooms

2 bell peppers

 

Glaze mixture:

2 Tbsp olive oil, divided

2 Tbsp honey, divided

2 Tbsp miso paste, divided

2 Tbsp soy sauce, divided

1 Tbsp rice vinegar, divided

1 tsp chilli flakes, divided

½ tsp black pepper, divided

salt, to taste

 

Preheat the oven to 225°C.

In a bowl, mix the chicken drumsticks with half of the olive oil, honey, miso paste, soy sauce, rice vinegar, chilli flakes, and black pepper.

Pour on a large oven tray lined with baking paper. Bake for 15 minutes.

While your drumsticks are baking, separate the cauliflower to florets. Clean the mushrooms. Cut the bell peppers to chunks. Then, in a bowl, mix all the veggies with the remaining olive oil, honey, miso paste, soy sauce, rice vinegar, chili flakes, and black pepper.

Take the tray of drumsticks out of the oven. Add the seasoned veggies.

Continue baking for 25 minutes until the chicken is well done and everything is nicely roasted on the surface.

Season with salt, if needed. Serve hot.

 

Tips for small eaters: serve with cooked rice.
