Recipe of the Week: Spicy Indian Qeema

Qeema or Keema is a traditional dish from India. The word has been borrowed from Turkish: kiyma, which means minced meat. Here the dish is served low-carb, with cauliflower rice. Mix it up! Recipe and ingredients will be available in the Low-carb box.

Spicy Indian Qeema with Cauliflower “Rice”

Serves 4
Cooking time 25 min

Ingredients

700g beef mince
4 carrots
3 small zucchinis
2 onions
5 garlic cloves
2-3 Tbsp cooking oil, divided
1 Tbsp ginger paste
1 tsp chilli flakes
1 tsp garam masala
1 tsp cumin
1 tsp coriander
1 tsp turmeric
200ml water
1 kg cauliflower
salt, to taste

Method

  1. Peel and cut carrots and zucchinis to small cubes. Peel and mince onion and garlic.
  2. Sauté the beef until nicely browned. Transfer to a plate and set aside.
  3. Add oil to the pan, and add all the veggies. Sauté for 5 minutes.
  4. Add all the spices and cook for 1-2 minutes. Add browned meat and water. Cover and cook
    in low heat for about 10-15 minutes or until the water has evaporated.
  5. Meanwhile, grate the cauliflower with a box grater or in a food processor, working in
    batches.
  6. Heat oil in another pan and add grated cauliflower crumbles. Sauté for about 5 minutes
    until excess moisture has evaporated and the cauliflower has browned a bit. Season with salt.
    Divide to plates, and top with Qeema.

    Tips for little eaters: Separate some of the beef and veggie mixture before adding the spices. Serve with regular rice.
