Chef’s Choice: Halloumi and Chimichurri Salad

No words can describe how delicious and addictive this salad is. The sweet potatoes, spinach, cherry tomatoes & fried Halloumi topped with the oh so spicy Hispanic Chimichurri. (you can control the spice if you prefer it mild) Oh and have we mentioned how extremely easy it is to make?

The Chimichurri can take you 5 minutes if you have a food or hand processor, however if you love chopping like Olivia does then you can also go that way and it still won’t take you more than 15 minutes. Your sweet potatoes will still be roasting in the oven.

When a recipe has pan fried Halloumi & roasted sweet potatoes you just know it’s going to be great. The Halloumi will take you less than 5 minutes to cube and pan fry! Chop your cherry tomatoes & spinach, cube your avocado and voila, your salad is ready!

What else is good next week?

This week it’s time to get cozy! We have some wonderful comfort meals on the menu.

Families can look forward to sharing a Shepherd’s Pie, the true British classic. We also have its vegan version on the menu, an indulging Sweet Potato and Lentil Pie with Rosemary and Lemon.

Mexican flavours are well represented this week! If you’re in the mood for a fiesta, choose the Spicy Crustless Chicken Taco Pie or the Tex Mex Chicken, Potato and Zucchini Casserole to your box!

Seafood lovers will be happy to find three dishes to choose from. The low-carb Sweet Miso Salmon is served on a bed of vegetables. The family-friendly fish dish of the week is a Fried Cod with Curry Vegetable Rice and Green Beans. And, for all the gourmets in town, we recommend Prawns and Sea bass with Lemon Garlic Oil and Parsnip Puree.
