Chef’s Choice: Lamb Rogan Josh Meatballs

Hello Chef recipes usually take only about 30 minutes to make. That means: no stewing for hours! This is why we take the liberty of speeding things up whenever possible.

The classic Rogan Josh curry is usually made of pieces of lamb meat, tenderized by slow cooking. Our delicious Rogan Josh comes with lamb meatballs instead!

First, let’s make meatballs. The key to tender and soft meatballs is kneading – take a few minutes to really massage the meatball mixture. You’ll thank yourself in the end!

Once the meatballs are ready, chop your vegetables and make your Rogan Josh curry paste. The food processor is always the best option for making any curry pastes. If you don’t have one, use a hand blender and a bowl, or a large mortar and pestle instead.

Once the curry paste is blitzed, start cooking your rice, because at this point you will be only 15 minutes away from enjoying a delicious home made meatball curry!

Take a large pan and fry your lamb meatballs first. Then add the curry paste you made in the food processor. Give it a good 4 minutes to cook, stirring constantly. This will really bring out all the aromas in the curry paste.

Add water and stock cube, and simmer for about 10 minutes until thickened. Finally fold in some yogurt, and round up the taste with honey. You’re all set! Serve over rice, garnished with fresh coriander… And enjoy.
