Chef’s Choice: Palak Paneer

How long does it take for a delivery man to bring you some Palak Paneer from an Indian restaurant? And how long does it take for you to to cook it yourself, using fresh ingredients? We dare to say: less!

And the ultimate best part? After cooking Palak Paneer once, you’ll always know how to make it, again and again. Not to mention, your home-made Palak Paneer will taste a lot better and fresher than any restaurant-delivered curry.

First, chop the ingredients: a few veggies and the paneer cheese. This will not take more than 5 minutes. You can also start boiling your rice, so that it will be done at the same time with the curry.

Then it’s the time for some spicy business! Heat a large pan and fry first the onions until translucent. Then add all the fragrant ingredients that make this curry shine. We’re talking about garlic, green chilli, ginger, cumin, garam masala, chilli powder…

Add all the liquid items next and let the sauce simmer for 10 minutes or so. In the meanwhile, blanch the spinach quickly, and fry the chopped paneer.

Finally, add the bright green blanched spinach into your curry sauce, and blitz the sauce until smooth, using a food processor or a blender. Add the curry sauce it back to the pan with the fried paneer cubes.

Serve the Palak Paneer curry over rice, with a few wedges of lime. Remember to squeeze some juice on top of your dish before digging in. Then, enjoy!
