Chef’s Choice: Spicy Prawn Soup – great for weight loss!

Get ready for Halloween and cook the Chef’s Choice of the week: the scary spicy Prawn and Butternut Squash Thai Soup!

We’re tricking you – this soup is actually not spooky at all. Instead, it’s a tasty treat with perfectly balanced flavours. Think slightly sweet squash, spicy red curry paste, creamy coconut milk, crunchy sugar snap peas…

As an added bonus, this soup is also very healthy. Low-carb, and only 440 calories per portion.

Start the preparation by chopping your butternut squash. Only a couple of other small things to chop, and the hard part is done!

After this it will be one pot wonder all the way. First, fry the pumpkin chunks in a large soup pot with a drizzle of oil. Add the rest of the soup ingredients, bring to a boil and cook, covered, until the squash has softened.

In the meanwhile, you’ll have plenty of time to chop the toppings, and even kick back and relax a little!

Finally, puree the soup with a stick blender. Add the prawns into the pureed soup and cook for a few more minutes, until the prawns have cooked through.

Divide the soup to plates, add the fresh and crunchy toppings, and swirl with a bit of coconut milk. Beautiful. Delicious.
