Chef’s Choice: Tandoori Style Cod

How would you feel about a little bit of zing in your life? Look no further. The Chef’s Choice of the week offers the experience you need!

This modern salad with classic Indian spices is not only a flavour-packed treat, but also a healthy and balanced one. Take your dinner plate and fill it up – your serving will only contain 534 calories.

The preparation of this plate of guilt-free goodness takes only around 35 minutes, and most of the work is done by the oven. So, start by preheating your oven to 200°C/180°C fan.

First, roast the oil-coated, seasoned chickpeas to crunchy bits, for about 20 minutes.

Meanwhile, prep the salad base by chopping all the vegetables and herbs. Start getting ready for some freshness!

Once the chickpeas are done, take them out of the oven and turn the grill on. It’s time to roast the yogurt-and-spice-seasoned cod goujons to perfection! This will not take more than 10 minutes.

Finally, combine the crispy roasted chickpeas with the salad vegetables, juicy pomegranate seeds and earthy herbs. Season with olive oil and lemon juice. Divide the salad and the Tandoori Style Cod among plates and finish with dollops of yogurt. Dig in!
