Chef’s Choice: Vietnamese Chicken Meatball Lettuce Cups
Feeling a bit heavy after the summer? Or just looking forward to returning on a healthy path after wandering on side tracks?
Worries away. Offering healthy and delicious recipes to cook is one of our specialties!
The Chef’s Choice of the week is as fun to cook as it is to eat. Forget knives and forks – these Vietnamese Meatball Lettuce Cups are meant to be devoured in a non-sophisticated manner! Watch Olivia prepare them in our latest YouTube video:
First, combine the meatball ingredients in a bowl. All the fresh herbs make these meatballs delicious – and they don’t add anything to the calorie count.
Once the meatballs are formed and cooked in a pan, the “hard” work is done! All that’s left to do is mixing the dipping sauce and chopping a few vegetables. And separating the gem lettuce into cups, of course.
When we said in the beginning that this dish is fun to cook and fun to eat, we really meant it. You might want to cook it again for your friends – invite them over on a weekend for a September-themed light dinner (and a bit of bubbly!)

What else is good next week?
Selecting your recipes for next week’s cooking be a hard task – there are so many delicious dinners to choose from! Let us see if we can help you a bit.
The first dinner of the week we recommend one of our amazing fish options. Try the Pan Fried Salmon with Green Pea Quinoa and Basil Pesto or the family-friendly Posh Fish and Chips with Peas and Tartar Sauce.
Choose a chicken recipe into your box. Go low-carb and cook the Crustless Chicken and Brussels Sprouts Quiche with Green Beans. If you’d like something gooey and comforting, opt for the Cheesy Garlic Chicken with Potatoes and Green Vegetables – it’s a customer favourite!
One vegan day a week is a must these days. Enjoy the Middle Eastern flavours of the Imam Bayildi Casserole. Or, try the fresh and flavourful Spanish Pepper and Watermelon Soup.
Reward yourself and your special someone with a steak night. The Gourmet recipe of the week is a Fillet Steak with Chimichurri, Sweet Potato Chips and Buttered Mushrooms – enough said!
