The Chef’s Choice of the week is as fun to cook as it is to eat. Forget knives and forks – these Vietnamese Meatball Lettuce Cups are meant to be devoured in a non-sophisticated manner! Watch Olivia prepare them in our latest YouTube video:

First, combine the meatball ingredients in a bowl. All the fresh herbs make these meatballs delicious – and they don’t add anything to the calorie count.

Once the meatballs are formed and cooked in a pan, the “hard” work is done! All that’s left to do is mixing the dipping sauce and chopping a few vegetables. And separating the gem lettuce into cups, of course.

When we said in the beginning that this dish is fun to cook and fun to eat, we really meant it. You might want to cook it again for your friends – invite them over on a weekend for a September-themed light dinner (and a bit of bubbly!)
