There’s so much to say about extra virgin coconut oil. No wonder this type of oil has been loved by so many health-conscious people around the world in the past few years.
I’m suspecting many of you have already hear of Earth’s Finest, which is a Hello Chef favourite. We love their coconut milk, coconut butter, creamed coconut, chia seeds, quinoa – and of course, the extra virgin coconut oil, extracted from fresh coconuts. Earth’s Finest harvests them from organically certified plantations in Sri Lanka. After harvesting, the white coconut flesh is cold pressed immediately for best nutritional value and aroma.
The benefits of coconut oil seem endless. A spoonful or two per day promotes a healthy heart by increasing the good cholesterol and by preventing high blood pressure. Coconut oil also helps to increase calcium absorption for building and maintaining durable bones. It has been said to improve memory and brain function as well as helping prevent Alzheimer’s Disease.
And have you heard of oil pulling? It’s a big hit these days, and extra virgin coconut oil is excellent for that. Oil pulling basically involves swishing a tablespoon of oil in your mouth on an empty stomach (in the morning or after a day of fasting) for around 20 minutes. Oil pulling is originally known as “kavala” or “gundusha”, and it’s an ancient Ayurvedic dental technique. This action is said to draw out toxins in the body to improve oral and overall health.
And, of course, there are many ladies – the Hello Chef ones included – who love to use Earth’s Finest extra virgin coconut oil with vanilla as a heavenly scented beauty product for hair and skin.
But back to the basics: a great quality extra virgin coconut oil just tastes delicious. We can’t think of any other oil that would be better for example for making pancakes, like our lovely butter-free, refined-sugar-free, and wheat-free Banana Oat Coconut Pancakes.

Healthy Banana Oat Coconut Pancakes

Serves 2-4
Cooking time 10 min

Ingredients:

2 very ripe bananas
4 eggs
1/2 cup oat flakes
pinch of cinnamon and/or cardamom
extra virgin coconut oil, for frying

Method:

1. In a bowl, combine peeled bananas, eggs, and oat flakes. Mix until smooth with a mixer. Season to your liking with a pinch of cinnamon or cardamom.
2. Heat a large frying pan over medium-high heat. Add 1-2 Tbsp of extra virgin coconut oil.
3. Pour 4-5 dollops of batter to the pan. Cook for 3-4 minutes, or until the batter is nearly set on top. Flip the pancakes, and cook for 2-3 more minutes. Transfer the pancakes to a plate and pop the plate to a warm oven (80C). Repeat with the rest of the batter.
4. Serve the pancakes warm with your favourite toppings: for example honey or maple syrup, Greek yoghurt, banana slices or other fruits, berries, nuts, peanut butter – and an extra drizzle of extra virgin coconut oil.
