How to cook (and win!) with Korean shiitake mushrooms

Did you know that shiitake mushrooms are often used as a meat replacement due to their strong, umami flavour and chewy, meat-like texture?

Native to East Asia, these delicious shrooms are tan to dark brown in colouring, with caps that grow between 2 and 4 inches. Not only are they low in calories, but they also contain many vitamins, minerals, and bioactive plant compounds – making them a great addition to any diet. 

Bought dried and crispy, they’re a great party pleaser when served with a blue cheese dipping sauce. Alternatively, they can be bought fresh and thinly sliced, before stir frying with garlic, ginger and soy for a speedy umami-filled dinner.
