Ingredient of the month: Lamb

Welcome back to our monthly ingredient series! In March, we shone the spotlight on everyone’s favourite leafy green: spinach. With a high iron content, plenty of magnesium and a number of anti-inflammatory nutrients, there are so many reasons to make sure spinach is included in your weekly menu. This month, we’re bringing your attention to a popular ingredient in this part of the world – even more so at this time of year, given Middle Eastern feasts being served across the region during the Holy Month of Ramadan. 

Lamb

Being rich in high-quality protein and many vitamins and minerals, lamb is an excellent component of a healthy diet. You’ll find it as a regular feature on our Weekly Menu, with many of our recipes utilising lamb in various different ways – from grilled lamb chops to lamb burgers, and meatballs to kebabs.

Middle Eastern Lamb and Eggplant Crumble

This gorgeous lamb recipe is the perfect centrepiece for a Ramadan or Eid celebration. Packed with Middle Eastern flavours, this dish brings ras el hanout to the table – a North African spice mix that traditionally contains cinnamon, cumin, coriander and sometimes even rose petals. Topped off with beautiful pink pomegranates, this stunning lamb recipe is as beautiful as it is delicious!

Greek Lamb Meatballs with Bean Stew and Feta 

We love a one-pan dish – not only does it mean less washing up, but we love how all the flavours can combine into one delicious dish. Lamb is a popular choice for meatballs, and remember – the longer you knead the mince meat mixture, the more tender your patties will become. They’ll also stick together better!

Pistachio Crusted Lamb Chops with Cauliflower Mash and Broccolini

Elevate your next treat night or Sunday roast with this gorgeous rack of lamb – topped with a nutty pistachio crust and a silky cauliflower puree. Traditionally, lamb chops are best served pink – but if you’re cooking for little ones, we’d recommend serving them well done.

Lamb Hot-Pot with Sauteed Cabbage

Hot-pot is a traditional and much-loved dish from the North West of England, and was typically served to workers after their long shifts at the cotton mills in Lancashire. It’s the culinary equivalent of a warm hug, and the best bit about our recipe? It comes in at under 700 calories per serving!
