Whether it’s an eggplant, aubergine or brinjal to you, this humble vegetable is a firm favourite at Hello Chef HQ. Though we’d vote against ever eating it raw thanks to its rubbery and dense texture when uncooked, there are a number of ways to enjoy eggplant recipes and its popular earthy, smoky flavour. It’s great chopped up into stews and curries, but we love it when it’s roasted or pan-fried and is the true shining star of a dish. It’s also a brilliant meat replacement for vegetarians in terms of flavour and is a regular hit in our meat-free recipes.
