Veganuary: 5 vegan recipes to try this month
Are you taking part in Veganuary this month? Celebrated every January, this month-long occasion inspires many to welcome in the new year with a diet swap, as they attempt to tackle the vegan way of life. Led by the UK-based nonprofit, the campaign attracted more than 400,000 sign-ups in 2020.

This low-carb take on fried ‘rice’ keeps calories low, but packs a flavour punch when topped with our zingy peanut sauce! Remember, the trick to crispy tofu is a hot pan and patience: try not to move the pieces around too much once they’re frying!
Cashew Chickpea Curry with Eggplant and Chapatis
Why not get the whole family involved in Veganuary with this mild and creamy curry? For extra creaminess, soak the cashew nuts for a few hours ahead. Alternatively, soak them overnight and blitz with the soaking liquid!
Tofu Pad Thai with Peanuts
Last but not least, our vegan take on a Thai favourite. Here, we use tofu instead of eggs which we then ‘scramble’ to add texture to our mixture. Go easy on the chilli if you’re not a fan of the heat!
